Recipe: Oven-Roasted Rosemary Potatoes

Summary: This simple roasting approach doesn’t require stirring or flipping, just put the tray in the oven and cook until fork-tender.

Ingredients

Oven-Roasted Rosemary Potatoes

Save yourselves the trouble of flipping. Place cut-side down, set, and forget. OK, don’t completely forget.

  • 2 pounds Yukon Gold potatoes
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh or dried rosemary
  • 1 teaspoon salt

Instructions

  1. Preheat the oven to 425 F.
  2. Cut the potatoes in quarters. Toss them with the olive oil, rosemary, and salt, in a large bowl. Place potato wedges cut-side down on a rimmed baking sheet which has been greased or lined with parchment paper.
  3. Place in the oven and roast without flipping for 30 minutes or until the potatoes pierce easily with a fork.

Recipe: Classic Spaghetti and Meatballs

Summary: The key to this great basic method is to brown the meatballs, then simmer them in the sauce (in the same pan if possible) to draw out that great flavor into the liquid.

Ingredients

Spaghetti And Meatballs

Classic Spaghetti and Meatballs are always a hit with our kids.

  • 1 pound ground beef
  • 1 egg
  • 1/2 cup unseasoned bread crumbs
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1 1/2 tablespoons olive oil
  • 1/2 pound uncooked spaghetti noodles
  • 24 ounce jar marinara sauce
  • 3 ounces grated parmesan cheese
  • 1 loaf crusty Italian bread

Instructions

  1. Mix together the ground beef, eggs, bread crumbs, parsley, salt, pepper, and garlic powder, in a large bowl.
  2. Heat the olive oil in a wide heavy-bottomed sauce pan, over medium heat. Form the meat mixture into balls with your hands and place the meatballs in the pan. Turn the meatballs as they cook so they are browned on all sides.
  3. Add the marinara sauce to the pan, and scrape the bottom of the pan with a wooden spoon to release browned bits into the sauce.
  4. Cover and simmer on low for at least 15 minutes or up to an hour, adding water if the sauce becomes too thick.
  5. Heat a large pot of water to a rolling boil over high heat. Add one tablespoon of salt to the water, then add the noodles. Return the pot to a boil, then reduce heat and simmer. Cook the noodles until they are just slightly firm to the bite, about 9 minutes. Toss the spaghetti with the sauce and meatballs, and serve topped with parmesan cheese, with bread on the side.

Roast Pork Tenderloin with Gorgonzola Sauce

Recipe: Roast Pork Tenderloin with Gorgonzola Sauce

Summary: We discovered this Bon Appétit recipe on Epicurious.com many years ago and it has been a favorite for entertaining. I’ve simplified the preparation and switched the sauce to use milk instead of cream.

Ingredients

Pork Tenderloin With Gorgonzola Sauce

  • 2 pork tenderloins, about 2-3 pounds total
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 1/2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • For the sauce:
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 cup whole milk
  • 4 ounces Gorgonzola cheese, crumbled

Instructions

  1. Preheat the oven to 400 F.
  2. Sprinkle the salt and pepper over all sides of the pork tenderloins. Heat the olive oil in a wide oven-proof skillet, over medium heat. Cook the tenderloins in the skillet until browned on all sides, about 2 minutes per side.
  3. Brush the pork with the mustard, and carefully insert an oven-safe thermometer into the thickest part of the pork, before placing the pan into the oven.
  4. Roast until the internal thermometer reads 150 F (145 F is safe according to new USDA standards but I prefer the texture slightly above this point), 20-30 minutes depending on thickness. Remove from the oven and set the pork on a cutting board, covered with foil and a towel to rest.
  5. While the pork is still roasting, heat the butter in a small saucepan over medium heat. When the butter has melted and began bubbling, whisk in the flour. Cook for 1 minute, stirring occasionally, and then begin adding milk gradually while whisking constantly. Continue cooking until the sauce begins to thicken. Remove from the heat.
  6. Allow the sauce to cool slightly before adding the Gorgonzola cheese. Stir until the cheese is incorporated, and add salt to taste. Slice the pork to 1/4 inch thickness, and serve with the sauce.

Posting New Recipes from the Spinning Meals App

New Recipes From App CollageThis week I am posting a number of recipes which are already available in the Spinning Meals app, and which you’ve probably seen and/or cooked if you’ve downloaded it. I’ll be posting each of the app’s recipes online, to enable a new feature: the ability to post recipe links to Facebook or Twitter from the app (as in, “I’m getting ready to make…”).

As a blogger it’s important to me that recipe providers get credit for what they publish. That’s why the Internet recipe capture feature in the app records the web address where the recipe was retrieved, and will use this to post a link back to the original site when you share favorite recipes with your friends. The Internet recipe capture feature isn’t about “running off with” someone’s recipes, it’s about keeping a digital personal use copy just like a website print-out you keep at home, and giving that website credit when you share what you like. So forgive me for the “barrage” of new recipes, and stay tuned for a great new update coming very soon. Happy Spinning!
